White Chocolate Oreo Cookies

This is a fresh baked recipe from Two Peas and Their Pod, White Chocolate Oreo Cookies, enough said.  The description and pictures of these little sweetums look amazing, I just had to bake them right away.

The first time I tried cookies with Oreo's inside I thought it was genius, a cookie within a cookie (Inception, cookie-style)!  But, I found them to be on the dry side.  However, these little babies have pudding mix inside them, I have yet to try a pudding cookie but the concept intrigued me enough to try.   This recipe was the best way to lose my pudding cookie virginity and I am now a believer, so here we go!

The reaction: holy momma these are melt-in-your-mouth delicious.  The addition of white chocolate pudding pushes the flavor over the top, there is so much jam packed into these little cookies, but not overwhelming.  It's hard to describe but they are almost light (is it possible to say a cookie is "light"??).  The cookie is more puffy and airy in the middle due to the addition of white chocolate pudding mix.  This is quite refreshing, especially during the holiday season where every cookie seems to weigh 5 pounds!  Also, the pudding keeps them moist and fresh long after they are hot-out-of-the-oven.

So I'll stop talking, and let's get to baking!

After you combine all of the ingredients (TIP: I used my hands to mix in the Oreo's and white chocolate chips as the batter was thick!) measure dough into heaping tablespoons and place on a baking sheet.  Bake in a 350 degree oven for about 10 minutes or until the edges are lightly golden.

Allow the cookies to cool on the hot baking sheet for a few minutes, then transfer to a wire rack to cool.

 Enjoy :)

Oreo White Chocolate Pudding Cookies

Ingredients:

1 cup unsalted butter, at room temperature
3/4 cup brown sugar
1/4 cup granulated sugar
1 (3.4 oz) package white chocolate instant pudding mix
2 large eggs
1 teaspoon vanilla extract
2 1/2 cups all-purpose Gold Medal flour
1 teaspoon baking soda
1/2 teaspoon salt
2 cups chopped Oreos
1 1/2 cups white chocolate chips

Directions:

1. Preheat oven to 350 degrees F. Line a baking sheet with parchment paper or a Silpat baking mat and set aside.
2. Using a mixer, beat together butter and sugars until creamy. Add in white chocolate pudding mix, eggs, and vanilla extract. In a medium bowl, whisk together the flour, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix until just combined. Stir in the Oreos and white chocolate chips.
3. Drop cookie dough by rounded tablespoons onto prepared baking sheet. Bake for 10 minutes, or until slightly golden around the edges and set. Remove cookies from oven and let cool on baking sheet for two minutes. Transfer to a cooling rack and cool completely.
Note-these cookies will stay soft for 3-4 days. Store in an air-tight container on the counter.
